There are options like the Kodak Network Scanners (see Link attached). The fact that these scanners start at over $2,000 would likely have folks look at setting up stations to old PC's as most affordable/entry level scanners now days only offer USB scanning; while higher end scanners would have scsi cards you might then look to the Network Scanners.

For small offices that would like some of the features of large MFP's but have a 2-3 person office, small networked MFP's like the Xerox 6128 MFP now start at under $600 and could fit the bill nicely offering scanning both of the glass or from the document feeder.

The most seamless scanning I've seen in small office environments like
that is when:
1) the scanner is attached to it's own SCSI card, and the scanning
doesn't tie up the system.
2) the scanner is attached to an old $20 pc and the client just RDP's
in to it (or KVM's over to it) and it scans to a network share.
That's all this pc does.
3) the scanner is attached to a headless $20 pc and is set up to
auto-scan to a network share. There's a physical "GO" button on the
scanner, and that's all the pc is used for. In this case the client
doesn't get to adjust/crop before the scan.
#2 & 3 may seem cheesy to IT professionals like you & I, but in my
experience small biz owners "just want a solution that works". They
don't care if the IT world thinks it's fancy or not. Also, if it's
dead simple like #3, the employer can have complely non-tech people do
it.
